Peanut Butter Granola
Our Volunteer Chef Denise shares:
Here's a recipe you can pass on :) I am pretty fluent in being creative in the kitchen (aka using whatever there is) so if you get any random ingredients and need some inspo to share let me know and I can come up with something :)
For the peanut butter granola:
Heat oven up to 350
Get a large baking pan (or two) and grease the bottom. If you don't have a baking pan you can use any large dish that goes in the oven
Empty all contents of oatmeal packets into large bowl
For each box of oatmeal you will want about 1/4 a cup of an oil to coat the oats
You can use any type of oil, coconut, canola, avocado etc, I wouldn't recommend olive oil bc the flavor may not go well with peanut butter
Pour the oil into bowl with oats and combine well, about 2-3 min of stirring
If you have vanilla or cinnamon you can put a generous amount in before you stir, both of these flavors go well with peanut butter
After you have mixed everything put on your baking sheet/pan, it's ok if its a little clumpy and you can just spread on the pan, it can be about an inch thick, but you don't want it to be much thicker than that
Cook for 20 then take out of oven and flip the oats and cook the other side for another 15/20 min
The goal is for the oats to become a golden color
Take out of oven and let cool until its completely cooled
Break up the granola and put in plastic bags
*If you have extra nuts, seeds or dried fruit you can also add those before you stir in the oil and cook the same*
