Peanut Butter Granola

Our Volunteer Chef Denise shares:

Here's a recipe you can pass on :) I am pretty fluent in being creative in the kitchen (aka using whatever there is) so if you get any random ingredients and need some inspo to share let me know and I can come up with something :)

For the peanut butter granola:

  • Heat oven up to 350

  • Get a large baking pan (or two) and grease the bottom. If you don't have a baking pan you can use any large dish that goes in the oven

  • Empty all contents of oatmeal packets into large bowl

  • For each box of oatmeal you will want about 1/4 a cup of an oil to coat the oats

  • You can use any type of oil, coconut, canola, avocado etc, I wouldn't recommend olive oil bc the flavor may not go well with peanut butter

  • Pour the oil into bowl with oats and combine well, about 2-3 min of stirring

  • If you have vanilla or cinnamon you can put a generous amount in before you stir, both of these flavors go well with peanut butter

  • After you have mixed everything put on your baking sheet/pan, it's ok if its a little clumpy and you can just spread on the pan, it can be about an inch thick, but you don't want it to be much thicker than that

  • Cook for 20 then take out of oven and flip the oats and cook the other side for another 15/20 min

  • The goal is for the oats to become a golden color

  • Take out of oven and let cool until its completely cooled

  • Break up the granola and put in plastic bags

*If you have extra nuts, seeds or dried fruit you can also add those before you stir in the oil and cook the same*
